the original kitchen was constructed in the 1950’s and had not been renovated for many years. to accommodate the full kitchen renovation we worked with the facility / nysdoa town of brookhaven building / planning, the fire marshal & the sdhs to set a temporary mobile kitchen with a separate grease trap and propane tank in the temporary kitchen trailer.
we were able to fully demolish the kitchen and reposition the cooking line, grease hood, and ansul to alleviate the very small and conflicting existing conditions. once completed the new layout has proven to be much more efficient.
